  • Russet or Baking Potatoes
  • Olive Oil
  • Tomato Sauce

How to Store Pizza Potatoes

These are best consumed immediately! They can be stored in an airtight container in the fridge for 2-3 days; however, reheated will never be quite as good as the original.

How to Broil Potato Planks

  1. If desired, peel the potatoes.
  2. Slice about 1/4 inch thick.
  3. Brush with olive oil and season with salt and pepper.
  4. High broil for 6-7 minutes. Potatoes should be almost fork tender and beginning to brown.
  5. Flip and return to the broiler for 3-4 minutes.
  6. Add your toppings, then broil for an additional 2-3 minutes, until cheese is melted.

Ingredients
  • 2 large potatoes
  • 3/4 c. tomato sauce
  • 1 c. mozzarella
  • Pepperoni or your favorite pizza toppings
Instructions
  • Preheat the oven to high broil.
  • Slice the potatoes about 1/4 inch thick. Brush each side with olive oil. Then, season with salt and pepper. Broil for 6-7 minutes, until almost fork tender and beginning to brown. Flip and return to the broiler for 3-4 minutes. Remove from the oven.
  • Next, top with pizza sauce, mozzarella, and pepperoni. Return to the oven and broil for 2-3 minutes, until cheese is bubbly and beginning to brown.
