Bursting with fresh lemon flavor, this baked oatmeal feels like springtime! Sweet and healthy, with real lemon juice and only a little maple syrup or sugar-free sweetener!

Baked oatmeal truly makes the perfect breakfast! It's easy to make-ahead and enjoy on-the-go! Plus, it's packed with fiber and heart-healthy whole grains!

Steps to Make Lemon Baked Oatmeal

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the melted butter, applesauce, maple syrup, lemon zest, lemon juice, and eggs. Then, whisk in the baking powder, salt, and flour or protein powder. Carefully whisk in the milk. Next, fold in the old-fashioned or rolled oats and white chocolate chips.
  3. Scoop about 1/4 cup of batter into 12 lined muffin cups. I recommend lightly spraying paper muffin liners. Then, bake for 30 minutes.
  4. If desired, melt about 1/4 – 1/3 cup of white chocolate chips and drizzle over the oatmeal cups. Or you can create a simple lemon drizzle. Stir melted butter, lemon juice, and powdered sugar until a thick glaze is formed. Then, use a spoon to drizzle over the oatmeal cups. Garnish with lemon zest.

How to make baked oatmeal gluten free and dairy free?

  • Gluten Free: Simply use certified gluten free oats and a gluten free flour. I often use oat flour.
  • Dairy Free: Use coconut oil or vegan butter and dairy free milk. Coconut, almond, soy, or oat milk all work well!

Do you eat baked oatmeal hot or cold?

Good news! Baked oatmeal can be enjoyed hot or cold! This lemon baked oatmeal can be enjoyed straight from the oven or reheated in the microwave the next day! Or on a busy morning- simply grab and enjoy cold as you're walking out the door!

Can I add protein powder to baked oatmeal?

You bet! I often add 2 scoops of protein powder in place of the flour. Oats have some protein, but it's nice to add a little boost! Without protein powder, I try to serve baked oatmeal with eggs or Greek yogurt.

Storing Baked Oatmeal

Baked oatmeal should always be kept in an airtight container. Personally, I prefer to store in the fridge. If you’re busy in the mornings, place individual servings in Ziploc bags or small containers to grab and go!

  • 2 Tbsp. butter, melted

  • 1 1/4 c. milk (can use dairy free)

  • 1/2 - 3/4 c. white chocolate chips

Lemon Drizzle

  • 1 Tbsp. butter, melted
  • 1 Tbsp. lemon juice
  • 1/3 c. powdered sugar

  • LEMON GLAZE: In a small bowl, whisk the melted butter, lime juice, and powdered sugar. Add a little more liquid or powdered sugar, until a thick glaze forms. Then, use a spoon to drizzle over the oatmeal. Or you can melt about 1/4 - 1/3 cup of white chocolate chips and drizzle over the oatmeal cups.
