Orange Chicken Stir Fry

This simple orange chicken stir fry is loaded with fresh veggies and a honey-orange glaze! Perfect for a healthy dinner any night of the week!

Stir fry is a terrific weeknight meal! Sauté some vegetables and a lean protein. Then, add a little sweet or spicy sauce and enjoy! With some practice, a healthy dinner could be ready in 30 minutes. 

For an even faster meal, you can use multiple pans, skip blanching the broccoli, slice the chicken before cooking, and/or use frozen vegetables.

Ingredients in Orange Chicken Stir Fry

  • Chicken Tenderloin
  • Broccoli
  • Bell Peppers
  • Orange Juice
  • Honey
  • Olive Oil
  • Coconut Aminos or Soy Sauce
  • Corn Starch

What is stir-frying?

This cooking technique involves high heat, a little oil, and continuous stirring. Originating from China, this quick-cooking method is often used for meat and vegetables. The best pan to use is a wok. The sloped sides make it easy to stir the food, without tossing it out of the pan.

Best Foods for Stir-Frying

  • Tender cuts of meat- chicken breast, flank steak, pork tenderloin

                  Cut into bite-sized strips

  • Vegetables

                   Most varieties, cut into bite-sized pieces will work

                   Summer squash, bell peppers, onions, shredded carrots, broccoli (may need to be blanched)

 

Which oil should I use?

For true stir-frying with high heat- refined coconut, avocado, and canola oil have high smoke points. These temps are too high for extra-virgin olive oil, butter, and sesame oil. Olive oil, not extra-virgin, also has a relatively high smoke point.

Ingredients
  • 12 oz. broccoli florets
  • Olive oil
  • 3 bell peppers, cut into strips
  • Salt and pepper
  • 1 lb. chicken breast tenderloins

Orange Sauce

  • 3/4 c. orange juice
  • 3 tsp. corn starch
  • 4 Tbsp. coconut aminos or soy sauce
  • 3 Tbsp. honey
  • Optional: diced scallions
Instructions
  • Bring a medium pot to a boil filled halfway with water. Then, add the broccoli and cook for 3-5 minutes.
  • In a large skillet, heat about 2 Tbsp. of olive oil over medium heat. Add the peppers, seasoned with salt and pepper, and sauté for 3-5 minutes. Remove and set aside. Add 1 Tbsp. of oil to the same skillet and sauté the broccoli for 2-3 minutes. Set aside.
  • In the same skillet, heat 1-2 Tbsp. of olive oil over medium heat. Season the chicken with salt and pepper. Then, brown each side, about 4-5 minutes. Remove and allow to cool. Next, slice into strips.
  • In a small bowl, whisk the orange juice and corn starch. Add to the warm skillet. Then, add the coconut aminos and honey. Stir and allow to boil for 2-3 minutes, until thickened. Then, add the peppers, broccoli, and chicken. Stir until coated. Garnish with diced scallions.
