Ingredients
  • 1/4 c. hot sauce
  • Juice of 1 lime
  • 2 - 2 1/2 lbs. chicken breasts
  • Salt and pepper
  • 1/2 c. hot sauce
  • Juice of 1 lime
  • 1 Tbsp. brown sugar
Instructions
  1. Pour 1/4 c. of hot sauce and the juice of one lime to the bottom of the instant pot. Add more, if needed, to cover the bottom of the pot. Season chicken with salt and pepper. Then, place on top of the hot sauce. Set the Instant Pot to poultry and high pressure. Cook for 13 minutes. Then, release the vent.
  2. Remove the chicken and allow to cool. Shred with two forks (or put on a pair of disposable gloves and shred with your fingers.) Meanwhile, set the Instant Pot to sauté for 4-6 minutes to reduce the remaining sauce. Add the chicken back to the pot. In a small bowl, whisk 1/2 cup of hot sauce, juice of one lime, and the brown sugar. Pour over the chicken and stir until well-coated.
