Chicken, Bacon, & Brussels Sheet Pan Supper

With only 3 ingredients, this chicken, bacon, and Brussels sprouts sheet pan supper will be ready in 30 minutes or less!

People have very strong reactions to Brussels sprouts. Loved or hated, there is no in-between. These small sprouts can be delicious, but often get a bad rap. This is almost always because they were not cooked properly.

STEAMING = TERRIBLE. Trust me! Boiled are also not great.

Using the oven or a skillet, you want a nice, roasted golden brown color. And the sheet or pan CANNOT be crowded. When it comes to sprouts, space is your friend. You also need a high enough cooking temp. to avoid steaming.

Normally, fitting dinner on one sheet pan is ideal, but this is one time where that is not recommended. For easy clean-up, cover the baking sheets with aluminum foil.

BRUSSELS SPROUTS TIPS

  • Look for smaller, more compact sprouts
  • Trim off the stem and remove any loose leaves
  • Halve or quarter for roasting and sautéing
  • For more flavor, cook them a bit longer than you’d think. Browner = Better
  • They can also be used raw and shredded to make a terrific salad!

Ingredients
  • 3-4 slices of bacon
  • 12 oz. Brussels sprouts
  • Olive oil
  • Salt and pepper
  • 8 oz. chicken, breast or thighs
Instructions
  • Preheat the oven to 400 degrees.
  • Cut the bacon into bite-sized pieces. Rinse, trim, and halve the brussels sprouts. In a medium bowl or on a sheet pan, combine the Brussels sprouts, 2 tsp. of olive oil, and half of the bacon. Mix, then season with salt and pepper. Arrange the sprouts so they are spread out and cut-side down on the baking sheet.
  • Cut the chicken into bite-sized pieces. In a small bowl, combine the chicken, the remaining bacon, 1-2 tsp. of olive oil, salt, and pepper. Arrange chicken/bacon on a separate baking sheet.
  • Place both baking sheets in the oven and bake for 20 minutes. Remove, combine, and enjoy!
