Vegan Peanut Butter Ice Cream

Ingredients

  • 3 c. dairy free half-and-half
  • 2 c. dairy free coffee creamer (vegan-friendly)
  • 1/2 c. brown sugar (organic)
  • 5-6 Tbsp. peanut butter
  • Optional: 4-5 gluten free sandwich cookies, crushed

Instructions

  • In a blender, add the half-and-half, coffee creamer, and brown sugar. In a small bowl, heat the peanut butter for about 15 seconds, until creamy and pourable. Add the peanut butter to the blender. Then, blend for 20-30 seconds. Pour into a prepared ice cream maker. Allow to churn for 20 minutes. Add crushed cookie pieces during the last few minutes of churning. Enjoy very soft or scoop into a freezer-safe dish and freeze for 2-3 hours.
