Taco Stuffed Peppers
Taco stuffed peppers are a healthy, low-carb dinner that can be made with ground turkey, shredded chicken, or beef. An easy weeknight dinner with tons of possibilities!

Ingredients
- 4 bell peppers
- Olive oil
- Salt and pepper
- 1 lb. ground or shredded meat (beef, chicken, or turkey)
- 1 1/2 Tbsp. taco seasoning
- 1 medium green pepper, diced
- 1 medium onion, diced
- 1 medium carrot, peeled & diced
- 1/2 - 1 c. salsa
- 1 c. cheese, shredded
- 1 handful of cilantro, chopped
Instructions
- Preheat the oven to 350 degrees.
- Cut the tops off of the peppers and remove the seeds and ribs. Using about 1 total Tbsp. of olive oil, brush the inside and outside of each pepper. Next, season with salt and pepper. Place in a baking dish and bake for 15-18 minutes.
- If using ground chicken or turkey, heat 1-2 Tbsp. of olive oil in a skillet over medium. Brown the ground meat, seasoned with salt, pepper, and taco seasoning. Then, remove from the skillet and set aside.
- Using the same skillet, heat 2 Tbsp. of olive oil over medium heat. Sauté the peppers, onion, and carrot for 5-8 minutes. Next, stir in the salsa. Then, add the ground meat to the pan and carefully stir.
- Spoon mixture into each pepper. Top with shredded cheese (could also add some cheese to the middle as you are filling.) Then, bake for 15-20 minutes. Peppers should be fork tender.
- Garnish with chopped cilantro.
