Sheet Pan Sausage and Pepper Subs

For a simple dinner with minimal clean-up, these sheet pan sausage and pepper subs are terrific any night of the week!

Ingredients

  • 1 large onion, sliced
  • 4-5 bell peppers, sliced
  • Olive oil
  • Salt and pepper
  • 1 lb. smoked sausage, sliced into 2-inch pieces
  • 4 gluten free rolls

Instructions

  • Preheat the oven to 425 degrees.
  • On the sheet pan, mix the onion, peppers, and 2 Tbsp. of olive oil. Spread into a single-layer. Next, season the veggies with salt and pepper. Add the chunks of sausage. Then, roast for 25-30 minutes, until tender and browned.
  • If desired, brush the rolls with olive oil or butter and toast. Fill rolls with the sausage and peppers.
