Ingredients

  • 1 large onion, diced
  • 2 - 3 bell peppers, diced
  • 2 lbs. ground chicken, turkey, or beef
  • 2 pkg. fajita or taco seasoning mix
  • 3 c. shredded cheese
  • 16+ tortillas
  • 1 Tbsp. butter, melted

Instructions

  • In a large skillet, heat 1-2 Tbsp. of olive oil over medium-high heat. Then, sauté the onion and peppers for 4-7 minutes, until tender. Season with salt and pepper. Remove from the skillet and set aside.
  • Using the same skillet, cook the meat until browned. Don’t forget to season with salt and pepper. Next, add the veggies back to the skillet. Season with the fajita or taco seasoning.
  • Brush the pan with melted butter. Then, arrange tortillas so they are sticking half-way over the edge of the pan. Sprinkle a layer of cheese on the bottom. Next, load in the meat/veggie mixture. Then, sprinkle with another layer of shredded cheese. Add tortillas to the center and fold over tortillas around the edges. Finally, brush the top with any remaining butter.
  • Bake at 425 degrees for 25 minutes. Cover the pan with another sheet pan for the first 20 minutes of cooking. Then, remove and allow to finish browning.
  • Slice the quesadilla and serve with salsa, scallions, cilantro, guacamole, and more!
