Sheet Pan Jambalaya

With only 8 ingredients and 30 minutes, this sheet pan jambalaya makes the perfect family meal any night of the week!

Ingredients

  • 1 medium onion, sliced
  • 4 bell peppers, sliced
  • Olive oil
  • Salt and pepper
  • 1 Tbsp. Cajun or creole seasoning
  • 1 lb. sausage, cut into chunks
  • 1 lb. shrimp, peeled and deveined
  • 12 oz. frozen cauliflower rice
  • 1 lime
  • 1 Tbsp. Cajun or creole seasoning
  • Optional: scallions, cilantro

Instructions

  • Preheat the oven to 425 degrees.
  • In a medium mixing bowl, mix the onion, peppers, 2 tsp. of olive oil, salt, pepper, and Cajun seasoning. Pour onto a lined baking sheet, and add the chunks of sausage. Bake for 10 minutes.
  • In the same mixing bowl, mix the shrimp, cauliflower rice, 2 tsp. of olive oil, salt, pepper, Cajun seasoning, and the juice of 1/2 of a lime.
  • Squeeze 1/2 of a lime over the sausage/peppers mixture. Add the shrimp/cauliflower rice to the sheet pan and mix carefully. Return to the oven for 15-20 minutes. Garnish with scallions and cilantro.
