Ingredients
- 4 wild-caught salmon fillets
- Olive oil
- Zest of one lime
- Juice of one lime
- Salt
Mango Salsa
- 3 mangoes, diced
- 1 red bell pepper, diced
- 1 handful of fresh cilantro, chopped
- Juice of one lime
Instructions
- Preheat the oven to 400 degrees.
- Lightly brush the salmon with olive oil. Then, place on a baking sheet lined with parchment paper. Next, zest the lime over the salmon fillets, drizzle with lime juice, and season with salt. Bake for 12-16 minutes, until salmon is opaque and flaky.
- In a medium bowl, add the mangoes, pepper, and cilantro. Drizzle with the lime juice. Then, carefully stir. Season with salt. Finally, spoon over the salmon.
