Salmon with Mango Salsa

Ingredients

  • 4 wild-caught salmon fillets
  • Olive oil
  • Zest of one lime
  • Juice of one lime
  • Salt

Mango Salsa

  • 3 mangoes, diced
  • 1 red bell pepper, diced
  • 1 handful of fresh cilantro, chopped
  • Juice of one lime

Instructions

  • Preheat the oven to 400 degrees.
  • Lightly brush the salmon with olive oil. Then, place on a baking sheet lined with parchment paper. Next, zest the lime over the salmon fillets, drizzle with lime juice, and season with salt. Bake for 12-16 minutes, until salmon is opaque and flaky.
  • In a medium bowl, add the mangoes, pepper, and cilantro. Drizzle with the lime juice. Then, carefully stir. Season with salt. Finally, spoon over the salmon.
