Remake: Ree Drummond's Sugar Cookies (Gluten Free)

Ree Drummond's sugar cookies are still classic and comforting, but are now gluten free, made with less sugar, and no unhealthy oils!

Ingredients

  • 1 stick of butter, softened
  • 1/4 c. coconut oil, melted
  • 1/2 c. cane or coconut sugar
  • 1/4 c. powdered sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1 3/4 c. gluten free flour blend
  • Additional sugar

Instructions

  • In a large mixing bowl, cream the butter, coconut oil, sugar, and powdered sugar. Next, beat in the eggs, vanilla, baking soda, cream of tartar, and salt. Finally, beat in the gluten free flour blend. Cover and refrigerate dough for at least 1 hour.
  • Preheat oven to 350 degrees.
  • Scoop and roll dough. Place at least 2 inches apart on a lined baking sheet. Then, spray the bottom of a glass with nonstick cooking spray. Dip the bottom in sugar. Gently press and flatten each cookie. Repeat process for remaining cookies.
  • Bake for 9-11 minutes, until beginning to brown on the edges. Allow to cool for a few minutes before moving cookies to a cooling rack.
  • Store in an airtight container.
