Pumpkin Overnight Oats

With a few minutes of prep the night before, these pumpkin overnight oats make a healthy & nourishing breakfast- ready and waiting in the fridge!

Ingredients

  • 1 Tbsp. maple syrup
  • 3/4 c. milk
  • 1 Tbsp. chia seeds
  • 1/4 c. pumpkin puree
  • 1/4 tsp. pumpkin pie spice
  • 1 scoop of protein powder
  • 1/2 c. old-fashioned or rolled oats

Instructions

  1. In a small bowl, stir the maple syrup, milk, and chia seeds. Then, stir in the pumpkin, pumpkin pie spice, and protein powder. Finally, stir in the oats. Make sure the oats are fully submerged in the liquid. Then, cover and refrigerate for at least 6 hours or overnight.
  2. Remove from the fridge. Next, stir and enjoy! Can be eaten cold or heated in the microwave.

Note: If you don't want to include protein powder, then only use 1/2 cup of milk.
