Porcupine Meatballs

Simmered in a simple tomato sauce, these porcupine meatballs make a hearty dish that has been filling dinner plates for many generations!

Ingredients

  • 1 lb. ground turkey or chicken
  • 1/2 c. uncooked brown rice
  • Salt and pepper
  • 1/2 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1/4 of a medium onion, grated
  • 1/2 c. water or low-sodium chicken broth
  • 15 oz. tomato sauce
  • 3/4 c. water
  • 2 Tbsp. brown sugar
  • 2 tsp. Worcestershire sauce

Instructions

  • In a large mixing bowl, combine the ground meat, brown rice, salt, pepper, garlic powder, and oregano. Next, grate the onion over the meat mixture. Pour in the water/broth. Then, use clean hands or a spoon to mix until well-combined.
  • In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Create 8 large meatballs. Lightly brown each side for 3-4 minutes. Then, add the tomato sauce, water, brown sugar, and Worcestershire sauce. Cover, reduce heat, and simmer for 65-75 minutes.
