Ingredients

  • 4 bell peppers
  • Olive oil
  • Salt and pepper
  • 1 lb. steak, thinly sliced
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 1/2 c. tomato sauce
  • 8 slices of cheese

Instructions

  1. Preheat the oven to 350 degrees. Cut the 4 bell peppers in half, removing the seeds, ribs, and stems. Then, brush with olive oil. Season with salt and pepper. Next, place in a baking dish and bake for 15 minutes.
  2. Meanwhile, heat a large skillet over medium-high heat. Brown the steak, seasoned with salt and pepper. Then, remove and set aside. Next, add 1 Tbsp. of olive oil to the same skillet. Sauté the peppers and onion for 4-7 minutes. Add the steak back to the skillet. Next, stir in the tomato sauce.
  3. Remove the peppers from the oven. Allow to cool slightly. Then, spoon the meat/veggie mixture inside each pepper. Top with a slice of cheese. Return to the oven for 15-20 minutes, until cheese is melted and peppers are fork tender.
