Oven Roasted Lemon Asparagus

Ingredients

  • Olive oil
  • 1 lb. asparagus
  • Salt and pepper
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  • Preheat the oven to 425 degrees.
  • Wash and trim the ends of the asparagus. Arrange spears in a single-layer on a baking sheet lined with parchment paper. Then, brush or drizzle with olive oil. Season with salt and pepper.
  • Roast asparagus for 14-20 minutes, depending upon size and thickness. Spears should be fork tender.
  • Remove from the oven and season with lemon zest and lemon juice. If desired, top with Parmesan cheese.
