Ingredients
- Olive oil
- 1 lb. asparagus
- Salt and pepper
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Preheat the oven to 425 degrees.
- Wash and trim the ends of the asparagus. Arrange spears in a single-layer on a baking sheet lined with parchment paper. Then, brush or drizzle with olive oil. Season with salt and pepper.
- Roast asparagus for 14-20 minutes, depending upon size and thickness. Spears should be fork tender.
- Remove from the oven and season with lemon zest and lemon juice. If desired, top with Parmesan cheese.
