Mini Bacon-Wrapped Meatloaf Sheet Pan Supper

Ingredients
- 1 1/2 lbs. ground turkey
- 2 tsp. coconut aminos or soy sauce
- 1 tsp. dried oregano
- 1/4 c. gluten free breadcrumbs
- 1 egg
- Salt and pepper
- 6 slices of bacon
- 1 1/2 lbs. baby potatoes, halved
- 1 Tbsp. olive oil
Instructions
- Preheat the oven to 400 degrees.
- In a large mixing bowl, add the ground turkey, coconut aminos, dried oregano, gluten free breadcrumbs, and one egg. Season with salt and pepper. Then, use clean hands or a spoon to mix until well-combined. Split into 6 equal-sized portions.
- Shape into mini rounded loaves. Next, carefully wrap each mini loaf with one slice of bacon and place on a lined baking sheet. Bake for 32-38 minutes, until an internal temperature reaches 165 degrees.
- In a medium bowl, add the potatoes and olive oil. Use clean hands to mix the potatoes until coated. Then, season with salt and pepper.
- After the meatloaf has been roasting for about 10 minutes, add the potatoes to the baking sheet. Roast potatoes for about 25 minutes, until fork tender.
