Keto Flatbread Stromboli

For a fun snack, appetizer, or low carb dinner, this keto flatbread stromboli is made with an almond flour crust and filled with pesto, meat, and cheese! Ready in 30 minutes or less!

Ingredients

  • 1 c. almond flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. Greek yogurt
  • 2 Tbsp. pesto
  • 1/4 lb. deli ham
  • 2 oz. pepperoni slices
  • 1/2 - 1 c. cheese, shredded

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the almond flour, baking powder, and salt. Then, beat in the Greek yogurt. Use clean hands to work the dough slightly. Dough can be refrigerated or used right away.
  3. Roll the dough between two sheets of parchment paper. Next, leave the parchment paper on the bottom and slide the flatbread onto a baking sheet. Spread a light layer of pesto on the flatbread. Then, top about half of the dough with ham, pepperoni, and cheese. Use the parchment paper to fold the other half of the dough over the meat and cheese portion. Leave the parchment paper on, but lightly press the edges of the stromboli together.
  4. Bake for 6-7 minutes. Then, remove from the oven and flip the stromboli over. Finally, return to the oven for 6-8 minutes, until the top is browned.
