Ingredients
- 1/2 c. butter, melted
- 1/2 c. keto-friendly Greek yogurt
- 2 oz. cream cheese, softened
- 1/2 c. golden monk fruit sugar
- 2 eggs
- 1/2 c. unsweetened almond milk
- 1 Tbsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. almond flour
Streusel Topping
- 1/2 c. almond flour
- 1/4 c. golden monk fruit sugar
- 1/2 tsp. cinnamon
- 1/4 c. butter, cold & cubed
Instructions
- Preheat the oven to 350 degrees.
- STREUSEL TOPPING: In a small bowl, whisk together the almond flour, monk fruit sugar, and cinnamon. Then, cut in the butter using a pastry blender or clean hands, until mixture resembles coarse crumbles. Set in the fridge.
- In a large mixing bowl, whisk together the butter, Greek yogurt, cream cheese, monk fruit sugar, and eggs. Then, whisk in the almond milk, vanilla, baking powder, cinnamon, and salt. Finally, whisk in the almond flour.
- Spoon mixture into a greased 9x9 baking dish. Next, sprinkle the streusel on top.
- Cover and bake for 10-15 minutes. Then, remove the cover and continue baking for 35-40 minutes. (46-50 minutes total)
- Allow to cool before slicing.
