Homemade Spinach Pesto

With a food processor, a few basic ingredients, and 10 minutes- you can make this homemade spinach pesto! Perfect in so many ways!

Ingredients

  • 1/4 c. walnuts, toasted
  • 1 c. spinach
  • 1/4 c. basil leaves
  • 2 tsp. lemon juice
  • 1 clove of garlic
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. olive oil
  • Optional: 1/4 c. Parmesan cheese

Instructions

  1. In a small skillet, toast the walnuts over low-medium heat until golden and fragrant, about 4-5 minutes.
  2. In a food processor, blend the walnuts, spinach, basil, lemon juice, garlic, salt, and pepper. Stream in the olive oil. Add pesto to a dish slowly until desired coating is reached.
  3. Store pesto in the fridge.
