Homemade Gluten Free Hamburger Helper

Ingredients
- Olive oil
- 1 medium onion, diced
- 1 - 2 bell peppers, diced
- Salt and pepper
- 1 lb. ground beef
- 1 c. tomato sauce
- 2+ c. low-sodium beef broth
- 2 c. gluten free macaroni
- 1/2 tsp. garlic powder
- 1/2 tsp. chili powder
- 1 c. cheese, shredded
- Optional: scallions, chopped
Instructions
- In a large skillet or medium saucepan, sauté the onion and peppers for 4-5 minutes with up to 1 Tbsp. of olive oil. Season with salt and pepper. Remove and set aside.
- In the same skillet, brown the beef for 4-5 minutes over medium heat. Season with salt and pepper. Remove and set aside with the veggies.
- Add the tomato sauce and 2 cups of broth to the skillet. Next, stir in the macaroni. Cover and cook for 7-10 minutes, until noodles are tender. Stir occasionally and add up to 1 cup of broth if the mixture starts to look dry.
- Stir in the garlic powder, chili powder, and cheese. Then, stir in the beef and veggies. Garnish with chopped scallions.
