Homemade Gluten Free Hamburger Helper

Ingredients

  • Olive oil
  • 1 medium onion, diced
  • 1 - 2 bell peppers, diced
  • Salt and pepper
  • 1 lb. ground beef
  • 1 c. tomato sauce
  • 2+ c. low-sodium beef broth
  • 2 c. gluten free macaroni
  • 1/2 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1 c. cheese, shredded
  • Optional: scallions, chopped

Instructions

  1. In a large skillet or medium saucepan, sauté the onion and peppers for 4-5 minutes with up to 1 Tbsp. of olive oil. Season with salt and pepper. Remove and set aside.
  2. In the same skillet, brown the beef for 4-5 minutes over medium heat. Season with salt and pepper. Remove and set aside with the veggies.
  3. Add the tomato sauce and 2 cups of broth to the skillet. Next, stir in the macaroni. Cover and cook for 7-10 minutes, until noodles are tender. Stir occasionally and add up to 1 cup of broth if the mixture starts to look dry.
  4. Stir in the garlic powder, chili powder, and cheese. Then, stir in the beef and veggies. Garnish with chopped scallions.
