Ingredients
- 1 1/2 - 2 c. sweet corn
- 1 orange pepper, diced
- 1 medium tomato, diced
- 2 scallions, diced
- 1 handful of cilantro, chopped
- Juice of 1 lime
Instructions
- In a medium bowl, combine the corn, pepper, tomato, scallions, and cilantro. Drizzle with lime juice. Then, mix with a large spoon. For the best flavor, allow the salsa to sit in the fridge for at least 30 minutes before serving.
