Gluten Free Sweet Tortilla Chips with Key Lime Cannoli Dip

Ingredients
- 6 medium tortillas (I used brown rice)
- 1 Tbsp. coconut oil, melted
- 2 - 3 Tbsp. fine sugar
Key Lime Cannoli Dip
- 8 oz. light cream cheese, softened
- 15 oz. ricotta
- Zest of 1 lime
- Juice of 2 limes
- 1/3 c. powdered sugar
- 2 Tbsp. orange juice
- 1 tsp. vanilla
- 1/4 tsp. cinnamon
- 1 tub of whipped topping (look for one without hydrogenated oil)
Instructions
- Preheat the oven to 400 degrees. Brush both sides of each tortilla with oil. Then, sprinkle with sugar. Slice each tortilla into 8 wedges and place onto baking sheets. Bake for 6-8 minutes, then flip wedges and return to the oven for 4-5 minutes. Chips should be browned.
- In a large mixing bowl, beat the cream cheese and ricotta until smooth. Next, beat in the lime zest, lime juice, powdered sugar, orange juice, vanilla, and cinnamon. Fold in the whipped topping. If desired, garnish with additional lime zest. Refrigerate dip until ready to serve.
