Ingredients
- 2 Tbsp. butter
- 1/2 c. gluten free bread crumbs
- 4 medium tomatoes, halved
- 8 oz. cream cheese, softened
- 1 Tbsp. olive oil
- 1 c. shredded cheese, divided
- 1 tsp. dried oregano
- 4 - 5 basil leaves, chopped
Instructions
- Preheat the oven to 400 degrees.
- In a small skillet, heat the butter until melted. Then add the breadcrumbs and cook, stirring frequently for 4-5 minutes, until browned.
- Halve the tomatoes and carefully scoop out the insides with a spoon. Next, brush with olive oil and season with salt and pepper. Place tomatoes cut-side up in a baking dish.
- In a medium mixing bowl, beat the cream cheese and olive oil until smooth. Then, stir in the toasted breadcrumbs, 1/4 cup of cheese, oregano, and basil. Season with salt and pepper. Scoop filling into the tomato halves. Next, sprinkle with the remaining cheese and season with more oregano.
- Bake for 15-20 minutes Set oven to high broil and broil for 1-2 minutes, until the cheese is browned.
