Ingredients
- Olive oil
- 1 small onion, diced
- 2 bell peppers, diced
- 1 clove of garlic, minced
- Salt and pepper
- 8 oz. ham, diced
- 3 - 4 oz. pepperoni, diced
- 3 oz. cream cheese
- 1/2 c. milk
- 1/2 c. marinara sauce
- 1 c. cheese, shredded (mozzarella, provolone, etc.)
- 1/2 tsp. oregano
- 8 - 9 oz. gluten free pasta
Instructions
- In a large skillet, sauté the onion, bell peppers, and garlic with olive oil. Season with salt and pepper. Then, stir in the ham and pepperoni.
- In a microwave-safe dish, soften the cream cheese. Microwave in 15-20 second increments until softened.
- In a large pot, bring water to a boil. Next, boil the pasta, according to package directions, until tender, about 7-10 minutes. Before draining, reserve 1/2 cup of pasta water.
- Next, add the cream cheese to the skillet with the veggies. Then, stir in the milk, marinara sauce, and cheese.
- Stir 1/4 – 1/2 cup of pasta water into the mixture. Continue cooking and stirring until a creamy sauce is formed. Then, carefully mix in the pasta. Garnish with dried oregano, parsley, and/or basil.
