Gluten Free S'mores Cookie Bars

With a layer of graham cracker cookie dough, marshmallow creme, and chopped dark chocolate- these gluten free s'mores cookie bars make one irresistible dessert!

Ingredients

  • 1 stick of butter, softened
  • 1/2 c. brown sugar
  • 1/4 c. sugar
  • 1 tsp. vanilla
  • 2 Tbsp. marshmallow creme
  • 1 egg + 1 egg yolk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. crushed gluten free graham crackers
  • 1/2 c. oat flour
  • 1/2 c. gluten free flour blend
  • 7 oz. marshmallow creme
  • 8 mini Hershey's chocolate bars, chopped
  • 1 gluten free graham cracker, crushed

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, beat the butter, brown sugar, and sugar until smooth. Then, beat in the vanilla, marshmallow creme, egg, egg yolk, baking soda, and salt. Next, beat in the crushed gluten free graham crackers, oat flour, and gluten free flour blend.
  • Press cookie dough into a 9x9 baking dish lined with parchment paper. Then, spread marshmallow creme over the cookie dough. Next, add half of the chopped chocolate bars over the marshmallow. Bake for 32-35 minutes. Finally, add the remaining chopped chocolate bars and sprinkle with crushed gluten free graham cracker crumbs. Allow to cool before slicing.
