Gluten Free Roasted Grape Crostini

Ingredients

  • 1 - 2 c. grapes
  • 1 baguette, thinly sliced (I used gluten free bagel thins)
  • Olive oil
  • 4 oz. cream cheese, softened
  • Zest of 1/2 lemon (+ more for garnish)

Instructions

  1. Place grapes in an air fryer, sitting in an aluminum foil pocket (slight rim) that does NOT cover all of the holes in the air fryer basket. Set to 400 degrees and roast grapes for about 6-7 minutes, until easily smashed with a fork.
  2. Meanwhile, place sliced bread on a baking sheet. Brush with olive oil. Next, low broil for 3-5 minutes, until brown and toasted.
  3. In a small mixing bowl, mix the cream cheese with the lemon zest.
  4. Spread cream cheese mixture on each slice of bread. Then, smash the grapes with a fork. Place on top of the cream cheese. Garnish with additional lemon zest. Serve warm, room temperature, or cold.
