Gluten Free Pumpkin Spice Biscotti

Ingredients
- 1 c. oat flour
- 1 c. gluten free flour blend
- 1/2 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 1/4 tsp. salt
- 2 eggs
- 1/2 c. pumpkin
- 1 tsp. vanilla
- Optional: white chocolate
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, whisk the oat flour, gluten free flour blend, sugar, baking powder, cinnamon, pumpkin pie spice, and salt. In a separate bowl, whisk the eggs, pumpkin, and vanilla. Then, add the wet ingredients to the dry and stir until a crumbly dough is formed. Use clean hands to lightly work the dough. Next, split the dough in half. Then, form each piece into a log shape. Place on a lined baking sheet and bake for 25-30 minutes.
- Remove from the oven and allow to cool for a few minutes. Set the oven temperature to 300 degrees.
- Cut each log into 3/4 inch slices. Next, lay the slices on the baking sheet. Return to the oven for 20 minutes.
- If desired, melt the white chocolate. Then, dip or drizzle the biscotti with the white chocolate. Allow to cool completely before storing.
