Gluten Free Pineapple Right Side Up Muffins

Ingredients

  • 1/2 c. unsweetened applesauce
  • 4 Tbsp. butter, melted
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 can of crushed pineapple (8 oz.)
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c. gluten free flour blend
  • 2 cans of sliced pineapple (14 slices)
  • 14 small cherries (or 7 cut in half)

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the applesauce, melted butter, brown sugar, maple syrup, crushed pineapple, eggs, and vanilla. Next, whisk in the baking soda, baking powder, salt, and gluten free flour blend.
  • Line 14 muffin cups with paper or silicone liners. Scoop about 1/4 cup of batter into each muffin cup. Then, top with a slice of pineapple (or pieces of pineapple.) Bake for 22-26 minutes, until an inserted toothpick comes out clean. Cut or tear off the muffin dough that rises through the center of the pineapple. Finally, top with a cherry.
