Gluten Free Peanut Butter Oreo Baked Oatmeal

Breakfast doesn’t have to be boring! This baked oatmeal is made with heart-healthy oats, peanut butter, and gluten free Oreos.

Ingredients

  • 2 Tbsp. butter or coconut oil, melted
  • 1/2 c. yogurt or applesauce
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 4 - 6 Tbsp. peanut butter, softened in the microwave
  • 1/2 tsp. baking powder
  • 1/2 c. flour (I used oat)
  • 1/4 tsp. salt
  • 1 c. milk (can use dairy-free)
  • 2 c. old-fashioned or rolled oats
  • 6 gluten free chocolate sandwich cookies, broken into chunks

Topping

  • 3 - 4 Tbsp. peanut butter
  • 2 gluten free chocolate sandwich cookies, crushed

Instructions

  • Preheat the oven to 350 degrees. In a large mixing bowl, whisk the butter/coconut oil, yogurt/applesauce, brown sugar, maple syrup, vanilla, eggs, peanut butter, baking powder, flour, and salt. Carefully whisk in the milk. Then, stir in the oats and broken cookie pieces. Next, scoop into 12 lined muffin cups. Bake for 30 minutes.
  • Heat peanut butter for a few seconds until it can easily be drizzled. Then, drizzle over the oatmeal. Sprinkle with crushed cookie pieces.
