Gluten Free Peanut Butter Cookies

Ingredients

  • 1 stick of butter, softened
  • 1/2 c. brown sugar
  • 1/4 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. creamy peanut butter
  • 1 egg + 1 egg yolk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/4 c. gluten free flour blend (use 1/2 c. of oat flour)

Instructions

  • In a large mixing bowl, cream the butter and sugar. Then, beat in the vanilla, peanut butter, egg, egg yolk, baking soda, and salt. Next, beat in the flour. Cover and refrigerate dough for at least 30 minutes (not 100% necessary, but always a good idea!)
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Scoop dough into rounded spoonfuls, placing about 2 inches apart. Bake for 8-12 minutes, until beginning to brown on the edges.
  • Allow to cool before removing from sheet pan.
