Gluten Free No-Bake Margarita Cheesecake

With these gluten free no-bake margarita cheesecakes, you can enjoy your favorite summertime cocktail without all of the alcohol and calories!

Ingredients

  • 8 oz. light cream cheese, softened
  • 1  Tbsp. tequila (or orange juice)
  • 2 Tbsp. lime juice
  • 1/2 c. powdered sugar
  • Optional: 1/2 tub of whipped topping
  • 8-12 gluten free graham crackers

Instructions

  1. In a large mixing bowl, beat the cream cheese until smooth. Next, beat in the tequila, lime juice, and powdered sugar. Fold in the whipped topping. Depending upon thickness, you can refrigerate before piping over the graham crackers. If desired, garnish with lime zest.
  2. Store in the fridge or freezer.
