Gluten Free Lobster Rolls
A summertime must- these gluten free lobster rolls are simply the best! Featuring large chunks of lobster, butter, lemon juice, and parsley sitting atop a toasted gluten free bun.

Ingredients
- 6 lobster tails
- 2 Tbsp. butter, melted
- Salt and pepper
- 3 Tbsp. butter, melted
- Juice of 1 lemon (about 1/4 cup)
- 1 handful of parsley, chopped
- 4 gluten free hot dog rolls
- 1 Tbsp. butter, melted
Instructions
- Set the oven to high broil.
- Using scissors, butterfly by cutting the tail down the middle. Carefully open up the shell and pull the meat out, leaving a small portion attached at the tail fin. Then, rest the meat on top of the shell. Brush with butter and season with salt and pepper. Broil for 3-5 minutes, watching closely. It will take about 1 minute per ounce of lobster tail. The shell will turn bright red and the flesh will become white and firm. Remove from broiler and allow to cool.
- Cut the lobster into bite-sized pieces. In a medium mixing bowl, mix the lobster, 3 Tbsp. of melted butter, lemon juice, and parsley. Allow to sit for a few minutes.
- Brush the rolls with melted butter. Next, place under the broiler until lightly toasted. Cut and fill each roll with the lobster mixture.
