Gluten Free Lemon Brownies

With a soft crumb and a sweet glaze, these gluten free lemon brownies are moist, chewy, and bursting with tangy lemon flavor!

Ingredients

  • 1/2 c. sugar
  • Zest of 2 lemons
  • 1 stick of butter, cubed
  • 1 tsp. vanilla
  • 2 Tbsp. lemon juice
  • 2 eggs + 1 egg yolk
  • 1/2 c. gluten free flour blend
  • Optional: 1/4 tsp. baking powder, for a cakier texture

Lemon Drizzle

  • 1 Tbsp. butter
  • 1 Tbsp. lemon juice
  • 1/3 - 1/2 c. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a microwave-safe bowl, add the sugar and lemon zest. Then, use your fingers to rub the two together. Next, add the butter to the dish and microwave for 10-15 second increments, until melted.
  • Pour the butter-sugar mixture into a large mixing bowl. Then, whisk in the vanilla, lemon juice, and eggs. Finally, whisk in the gluten free flour blend.
  • Spread batter into a greased 8x8 or 9x9 baking dish. Bake for 15-18 minutes, until a toothpick comes out mostly clean. Allow to cool completely.
  • LEMON DRIZZLE: In a small bowl, melt the butter, Then, whisk in the lemon juice and powdered sugar. Add a little more liquid or sugar until a thick glaze forms. Lastly, use a spoon to drizzle over the brownies. For a spreadable glaze, add more sugar.
