Gluten Free Keto Granola

Ingredients

  • 1/2 c. flax seed
  • 1 c. raw almonds
  • 1 c. macadamia nuts
  • 1 c. pecans
  • 1/2 c. pistachios
  • 1/2 c. raw pumpkin seeds
  • 1/2 c. raw sunflower seeds
  • 4 Tbsp. monkfruit or keto sugar
  • 1 egg white
  • 1/4 c. butter, melted
  • 1 tsp. vanilla
  • 1 1/2 tsp. cinnamon

Instructions

  • Preheat the oven to 325 degrees.
  • In a food processor, lightly process the flax seeds, almonds, and macadamia nuts. Then, add the pecans, pistachios, pumpkin seeds, and sunflower seeds. Lightly pulse. Next, add the sweetener, egg white, butter, vanilla, and cinnamon. Lightly pulse just until combined.
  • Spread in a thin layer onto a lined baking sheet. Then, bake for 16-22 minutes, depending upon thickness. Mixture should be lightly browned. Allow to completely cool. Finally, break into pieces and store in an airtight container.
