Gluten Free Hot Cocoa Brownies

These gluten free hot cocoa brownies are sweetened with applesauce, a bit of brown sugar, and maple syrup- that's it! The perfect fudgy sweet treat, you don't even need to feel bad about going back for seconds!

Ingredients

  • 1/2 c. applesauce
  • 2 Tbsp. coconut oil, melted (or vegetable oil)
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 Tbsp. cream or milk
  • 1 Tbsp. cold coffee
  • 2 eggs
  • 3 Tbsp. cocoa powder
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 packet of hot cocoa mix
  • 3/4 c. gluten free flour blend (I used oat and tapioca)
  • Optional: marshmallow from 3-4 packets of hot cocoa mix
  • 1 packet of hot cocoa mix

GLAZE

  • 1 packet of hot cocoa mix
  • 1/4 c. powdered sugar
  • 1-2+ tsp. cream or milk
  • 1/4 c. hot cocoa marshmallows (from 4 packets of hot cocoa mix)

Instructions

  • Preheat the oven to 350 degrees. In a large mixing bowl, whisk the applesauce, oil, brown sugar, maple syrup, vanilla, cream, and coffee. Then, whisk in the eggs, cocoa powder, baking powder, salt, flour, and hot cocoa mix. If desired, stir in the marshmallows.
  • Pour into a greased 8x8 or 9x9 baking dish. Sprinkle 1 packet of hot cocoa mix over the top. Next, bake for 18-22 minutes, until an inserted toothpick comes out mostly clean. Allow to cool before slicing.
  • GLAZE: In a small bowl, whisk the hot cocoa mix, powdered sugar, and liquid. You may need to add a bit more powdered sugar or liquid until desired consistency is reached. Use a fork or spoon to drizzle over the cooled brownies. Then, top with mini marshmallows.
