Gluten Free Ginger Snap Apple Crisp

Ingredients

  • 6 - 8 apples, peeled & sliced
  • 1 Tbsp. lemon juice
  • 2 Tbsp. apple cider
  • 1 Tbsp. corn starch
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg

Ginger Snap Streusel

  • 1 c. gluten free ginger snaps, crushed (about 3-4 oz.)
  • 2 Tbsp. brown sugar
  • 2 Tbsp. gluten free flour (I used oat flour)
  • 4 Tbsp. butter, cold & cubed

Instructions

  • Preheat the oven to 400 degrees.
  • In a large mixing bowl, combine the sliced apples, lemon juice, apple cider, corn starch, cinnamon, and nutmeg. Using clean hands or a spoon, mix until combined. Pour apples into a greased pie baking dish.
  • In a small bowl, mix the ginger snaps, brown sugar, and flour. Then, add the cubed butter. Use clean hands or a fork to cut in the butter. Mixture should still have small clumps. Then, sprinkle over the apples. Cover and bake for 20 minutes. Then, remove the cover and lower oven to 350 degrees. Return to the oven for 15-20 minutes, until apples are fork tender.
  • Top with whipped cream or vanilla ice cream.
