Gluten Free Flatbread Pizza

Ingredients
- 1+ c. gluten free flour blend with xanthan gum
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 c. plain Greek yogurt
- Olive oil
- 1/2 c. marinara sauce
- 1 c. mozzarella cheese
- Optional: pepperoni, veggies, Parmesan, etc.
- Optional: dried oregano
Instructions
- Preheat the oven to 375 degrees.
- In a large mixing bowl, whisk the 1 cup of flour, baking powder, and salt. Then, beat in the Greek yogurt.
- In the mixing bowl, knead the bread 12-15 times, while adding up to 1/4 cup of more flour as needed. You want to create a just slightly sticky dough. If desired, refrigerate dough.
- Split the dough into 2 or 3 pieces. Next, roll each piece of dough between two pieces of parchment paper. Place on a baking sheet, with the parchment paper under the crust.
- Then, brush with olive oil and bake for 8-10 minutes. Remove and top with sauce and your favorite toppings. Finally, return to the oven for 8-10 minutes.
