Ingredients

Cookie Dough Layer

  • 2 sticks of butter, softened
  • 1/2 c. brown sugar
  • 4 Tbsp. maple syrup
  • 2 tsp. vanilla
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. gluten free flour blend (I used oat, almond, and tapioca)
  • 1 1/2 c. old-fashioned or rolled oats
  • 1/2 c. white chocolate chips
  • 1/2 c. dried cranberries

Blondie Layer

  • 1 1/2 sticks of butter, softened
  • 3/4 c. brown sugar
  • 3 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 3 Tbsp. orange juice
  • 3/4 c. milk (can use dairy free)
  • 3/4 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 tsp. salt
  • 2 1/4 c. gluten free flour blend (I used oat, almond, and tapioca)

Middle Layer

  • 20 gluten free vanilla sandwich cookies

Instructions

  1. Preheat the oven to 350 degrees.
  2. COOKIE DOUGH LAYER:  In a large mixing bowl, beat the butter until smooth. Then, cream the butter and brown sugar. Next, beat in the maple syrup, vanilla, eggs, baking soda, salt, and flour. Stir in the oats, white chocolate chips, and dried cranberries.
  3. BLONDIE LAYER: In a second large mixing bowl, cream the butter and brown sugar. Then, beat in the maple syrup, vanilla, and eggs. Next, beat in the orange juice, milk, cinnamon, baking powder, baking soda, salt, and flour.
  4. Grease a 9x13 baking dish. Spread the cookie dough on the bottom of the baking dish. Then, top with the sandwich cookies. Next, pour and carefully spread the blondie batter over the cookies. If desired, top with sprinkles. Bake for 24-27 minutes, until a toothpick comes out clean. Allow to cool before slicing.
