Gluten Free Crustless Quiche

This crustless quiche is naturally gluten free and perfect for weekend brunch! Sauté some veggies and meat, add some eggs and milk/cream, bake, and you're done.

Ingredients

  • 2-3 slices of cooked bacon, crumbled
  • 1 medium bell pepper, finely diced
  • 3-4 oz. ham, diced
  • 1 c. chopped broccoli florets
  • Salt and pepper
  • 5 eggs
  • 1/2 c. milk
  • 1/2 c. shredded cheese

Instructions

  1. Preheat the oven to 350 degrees. If desired, sauté the pepper, ham, and broccoli for 4-7 minutes in a large skillet with 1 Tbsp. of olive oil. Season with salt and pepper. Pour into a greased pie dish. In a small bowl, whisk the eggs, milk, salt, and pepper. Whisk, then pour over the veggie/meat mixture. Sprinkle with crumbled bacon and shredded cheese.
  2. Bake for 40-45 minutes. If top begins to brown too much, cover with aluminum foil and continue to bake.
  3. Allow to cool before slicing.
