Gluten Free Coconut Lime Cookies

Ingredients
- 1 stick of butter, softened
- 1/2 c. brown sugar
- Zest of 1 lime
- 2 Tbsp. lime juice
- 1/2 tsp. vanilla
- 1/2 tsp. baking soda
- 1 c. gluten free flour blend
- 3/4 c. coconut flakes
Lime Drizzle
- 1 Tbsp. butter, melted
- 1 Tbsp. lime juice
- 1 - 2 tsp. milk or cream
- 1/2 c. powdered sugar
- Optional: lime zest, coconut flakes
Instructions
- In a large mixing bowl, cream the butter and brown sugar. Then, beat in the lime zest, lime juice, vanilla, baking soda, and flour.
- Pulse the coconut shreds in a food processor or chop them up with a sharp knife so they are finer. Smaller pieces make a more desirable texture in the cookies. Add to the cookie batter and mix until combined. Place in the fridge for a few minutes.
- Preheat the oven to 350 degrees.
- Line baking sheets with parchment paper or silicone baking mats. Roll cookie dough into balls, about 1 Tablespoon of dough per cookie. Set at least 2 inches apart on baking sheet. Bake for 8-10 minutes. Allow to cool on tray before removing.
- In a small bowl, whisk the butter, lime juice, milk/cream, and powdered sugar until a thick glaze forms. Pipe or drizzle over the cooled cookies. If desired, sprinkle with lime zest or coconut flakes.
