Gluten Free Chicken Parmesan Sandwiches

Pretty enough to impress guests, but simple enough for any weeknight- try these gluten free chicken parmesan sandwiches today!

Ingredients

  • Olive oil
  • 8 chicken tenderloins (about 1 lb.)
  • Salt and pepper
  • 2 gluten free rolls
  • 1 c. your favorite tomato sauce
  • 4 slices of cheese (mozzarella, provolone, etc.)
  • Grated parmesan
  • 1 handful of fresh basil, chopped

Instructions

  1. In a large skillet with 1-2 Tbsp. of olive oil, brown the chicken, about 3-5 minutes per side. Season with salt and pepper.
  2. If desired, toast the rolls. Then, top each half of the roll with two chicken tenderloins, tomato sauce, sliced cheese, and Parmesan. Low broil for 3-5 minutes, until cheese is melted. Finally, garnish with chopped basil.
