Gluten Free Chicken Parmesan Sandwiches

Ingredients
- Olive oil
- 8 chicken tenderloins (about 1 lb.)
- Salt and pepper
- 2 gluten free rolls
- 1 c. your favorite tomato sauce
- 4 slices of cheese (mozzarella, provolone, etc.)
- Grated parmesan
- 1 handful of fresh basil, chopped
Instructions
- In a large skillet with 1-2 Tbsp. of olive oil, brown the chicken, about 3-5 minutes per side. Season with salt and pepper.
- If desired, toast the rolls. Then, top each half of the roll with two chicken tenderloins, tomato sauce, sliced cheese, and Parmesan. Low broil for 3-5 minutes, until cheese is melted. Finally, garnish with chopped basil.
