Gluten Free Banana Chocolate Chip Bread

Ingredients
- 3 ripe bananas, mashed
- 4 Tbsp. butter, softened (partially melted)
- 1 Tbsp. maple syrup
- 1/4 c. brown sugar
- 1 tsp. vanilla
- 2 eggs
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 c. gluten free flour blend ( used oat, almond, and a Target GF blend)
- 1/3 c. mini chocolate chips
- Optional: chocolate chips
Instructions
- Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Then, whisk in the butter, maple syrup, brown sugar, vanilla, and eggs. Next, whisk in the baking powder, baking soda, salt, and flour. Stir in the chocolate chips.
- Pour into one large, greased loaf pan or 8 mini, greased loaf pans. Bake for 50-60 minutes for large or 20-25 minutes for mini. An inserted toothpick should come out clean. Allow to cool.
- If desired, melt about 1/3 cup of chocolate chips in a small bowl. Drizzle or pipe over the cooled banana bread.
