Gluten Free Apple-Cinnamon Pancakes

Ingredients
- 1/2 c. applesauce
- 1 Tbsp. butter, melted
- 3/4 c. milk
- 1/4 c. apple cider
- 1/2 tsp. vanilla
- 1 egg
- 1 Tbsp. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 c. gluten free flour blend (I used 1/2 c. oat, 1/4 c. almond, 1/4 c. cassava)
Apple Crisp Topping
- 2-3 tsp. coconut oil
- 2 large apples, peeled and diced
- 1 Tbsp. orange juice
- 1/2 tsp. cinnamon
- 2 Tbsp. brown sugar
Instructions
- Heat a large skillet or griddle over medium heat. Meanwhile, in a medium mixing bowl, whisk all of the ingredients together. Test skillet by splashing a few drops of water in the pan. If the water sizzles, the pan is ready. Pour batter to make individual pancakes. Cook on each side for 2-5 minutes.
- Using the same skillet, heat the coconut oil over low heat. Peel and dice the apples. Then, add to the skillet and raise the heat to medium-high. Stir in the orange juice and cinnamon. Next, sauté for 4-5 minutes. Once apples are fork tender, turn off the heat. Then, sprinkle the apples with the brown sugar and stir. Serve warm.
