Gluten Free Apple Cinnamon No-Bake Cheesecake

Ingredients

  • 4 oz. cream cheese, softened
  • 2 Tbsp. milk or cream
  • 1/4 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 c. powdered sugar

Apple Topping

  • 2 medium apples, peeled & diced
  • 1 tsp. coconut oil
  • 1/4 tsp. cinnamon
  • 2 tsp. brown sugar
  • 4 gluten free graham crackers

Instructions

  1. In a large mixing bowl, beat the cream cheese until smooth. Next, beat in the milk/cream, vanilla, cinnamon, and powdered sugar. Beat on high until mixture is very smooth. Cover and set in the fridge.
  2. In a small skillet, heat the oil over medium heat. Then, sauté the apples for 4-5 minutes, until fork tender. Season with cinnamon and brown sugar during the last minute of cooking.
  3. Spoon or pipe cream cheese onto each graham cracker. Next, spoon the apple mixture over top. If desired, garnish with whipped cream or whipped topping. Serve warm or cold.
