GF Peanut Butter Protein Blondies

Ingredients

  • 4 Tbsp. butter, partially melted
  • 1/2 c. applesauce
  • 1/2 c. brown sugar
  • 4 Tbsp. creamy peanut butter
  • 2 Tbsp. peanut butter powder
  • 1 tsp. vanilla
  • 2 eggs
  • 2 scoops of protein powder (I used vanilla)
  • 1/2 tsp. baking soda
  • 1/2 c. gluten free flour blend
  • Optional: 1/3 c. chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the butter, applesauce, and brown sugar. Next, whisk in the peanut butter, peanut butter powder, vanilla, eggs, protein powder, baking soda, and gluten free flour. Stir in the chocolate chips.
  • Pour into a greased 9x9 baking pan. Bake for 18-22 minutes, until an inserted toothpick comes out clean. For a gooey center, bake for 15-17 minutes. Allow to cool before slicing. Store in the fridge.
  • Optional: 2 Tbsp. of peanut butter powder, 3 Tbsp. of powdered sugar, and 1+ Tbsp. of milk/cream to create a peanut butter drizzle
