Ingredients
- 2 Tbsp. coconut oil, melted (or butter)
- 1/2 c. applesauce or yogurt
- 1/4 c. brown sugar
- 2 Tbsp. maple syrup
- 3 Tbsp. creamy peanut butter
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. flour (I used oat)
- 2 c. old-fashioned or rolled oats
- 1 c. milk (can use dairy free)
- 1/3 c. marshmallow fluff
Instructions
- Preheat the oven to 350 degrees. In a large mixing bowl, whisk the coconut oil, applesauce, brown sugar, maple syrup, peanut butter, vanilla, and eggs. Continue to whisk in the baking powder, salt, and flour. Carefully mix in the milk. Then, stir in the oats. Finally, fold in the marshmallow fluff.
- Spoon mixture into a greased 9x13 baking dish or 12-14 lined muffin cups. If desired, spoon additional marshmallow on top. Note: this will brown while baking. Then, bake for 30-35 minutes.
