Easy Stovetop Parmesan Chicken

Ingredients

  • Olive oil
  • 2 chicken breasts
  • 16 oz. marinara sauce (about 2/3 of a standard jar)
  • Salt and pepper
  • Parmesan cheese
  • Mozzarella cheese

Instructions

1. Heat a few tablespoons of olive oil in a medium saucepan over medium-high heat. Once hot, carefully add the chicken breasts to the pan. Cook for about 4-5 minutes per side, or until the chicken is golden brown on each side. Season with salt and pepper.

2. Next, reduce the heat to medium-low. Then, pour or spoon in the marinara sauce. Cover the skillet with a lid and let it simmer for 20 minutes. 

3. Remove the chicken from the pot and allow to cool for a few minutes. Then, use two forks to shred the chicken or slice with a knife. Add the chicken back to the pot and stir with the marinara sauce.

4. When serving, top the chicken with a generous amount of shredded mozzarella and Parmesan cheese. 

5. Garnish with fresh basil or parsley for a burst of color and freshness. Serve your stovetop chicken Parmesan with a side of pasta, a green salad, or some crusty bread to soak up the extra sauce.
