Ingredients
- 10 small tortillas (flour or gluten free)
- 1 Tbsp. coconut oil
- 2 Tbsp. fine sugar
Cream Cheese Filling
- 16 oz. light cream cheese, softened
- 1/4 c. cream or milk
- 1 tsp. vanilla
- 1/2 c. powdered sugar
- 2 individual containers of Greek yogurt (I used vanilla)
Instructions
- Preheat the oven to 400 degrees. Brush each side of the tortillas with oil and sprinkle with sugar. Use the bottom of a muffin pan to create taco envelopes or taco bowls. Bake for 5-8 minutes, until browned. Allow to cool before removing.
- Cream Cheese Filling: In a medium mixing bowl, beat the cream cheese until smooth. Then, beat in the cream/milk, vanilla, powdered sugar, and Greek yogurt. Spoon or pipe into the taco shells. Top with chocolate chips, sprinkles, fruit, etc.
