Chicken Cordon Bleu Skillet

This chicken cordon bleu skillet makes an easy weeknight meal with just a few minor adjustments from the classic recipe. It's gluten free, not-fried, full of flavor, and ready in only 20 minutes!

Ingredients

  • Olive oil
  • 4-6 boneless, skinless chicken thighs
  • Salt and pepper
  • 4-8 oz. thinly sliced ham
  • 1/2 c. shredded cheese

Instructions

  1. In a large skillet, heat 2-3 tablespoons of olive oil over medium heat (enough to cover the bottom of the pan.) Place chicken in the skillet, then season with salt and pepper. Allow to cook for 5-6 minutes, until lightly browned and does not stick to the pan. Next, flip and cook for 5-7 minutes on the second side. (can check with a meat thermometer- 165)
  2. Top each thigh with ham and shredded cheese. Allow to sit over low heat for 2-3 minutes, until cheese melts. Serve with your favorite veggies.
